Shabu shabu means "swish-swish," referring to the swishing action when you cook a very thin slice of beef in hot water. This type of nabemono cooking (i.e. dishes served in a pot) necessitates beef that is well marbeled with fat. Even the most tender cuts of young beef shrivel up and become tough and unappetizing morsels if the beef is not adequately marbeled.

Well marbled, grain fed beef (such as our Scottish | Kobe beef) cooks faster at a lower temperature than meat with less fat: the fat melts and cooks the protein fibrils without causing excessive amino acid breakdown. Grass-fattened beef with less inter and intra-muscle bundle fat overheats in the boiling liquid. The sulphur-containing amino acids in the muscle protein begin to break down and a characteristic pungent odour is given off.

Our Shabu Shabu package contains 500 grams of thinly sliced Scottish | Kobe beef (sliced while frozen, using our commercial-grade meat slicer). We also include black mushrooms, noodles, fresh Chinese cabbage, tofu, a sachet of bonito flakes and dashi kombu for the broth, two jars of dipping sauce (soy and sesame), a bag of long-grain rice, green tea, and a Sake gift box.

Scottish | Kobe Beefburgers
Our Scottish | Kobe hamburger patties are hand-made, and each weigh approximately 1/2 pound (226g). They are sold in a package of two patties --- total package weight 1 lb (552g). They are delicious grilled, but can also be fried or even baked.

Ingredients: Finest hand-ground Scottish | Kobe beef, the juice of half a fresh lemon, and a small dash of tomato ketchup, Worcestershire sauce, mustard, soy sauce, plus a pinch of dill and seasoned salt.

Grill for approximately 4 minutes per side for medium rare, and 6 to 8 minutes per side for well done. The internal temperature should reach 160 degrees F (70 degrees C) to eliminate the risk of e-coli infection that can be present in any meat product.
